I love love love my EVO10. I've cranked out sourdough loaves at 85% hydration, shokupan, pizza dough, and baguettes so far. It's so easy to use and has easily fallen into my day to day process. I was afraid of the fixed bowl and fixed head aspect (I’m a home baker), but it was easy to clean. You won’t regret this purchase.
